1. Tacos al Pastor Ingredients: 1 kg pork tenderloin 6 tablespoons achiote paste 4 cloves of garlic, chopped Juice of 4 oranges and 2 lemons 1 large pineapple, diced 2 white onions, thinly sliced Salt and pepper to taste 18 corn tortillas Preparation: 1. Mix the achiote, garlic, orange juice and lemon juice. Marinate the pork tenderloin for 2 hours. 2. Grill the meat on a grill or pan until golden. Cut into thin strips. 3. Brown the pineapple slices in the same pan. 4. Serve in the tortillas with the meat, pineapple, onion and cilantro. 5. Bean Tacos Ingredients: 4 cups cooked black beans (canned) 2 chopped white onions 4 chopped garlic cloves 2 chopped red peppers 200 g grated costeño cheese 2 sliced ??avocados Salt, pepper and cumin to taste 18 corn or flour tortillas Preparation: 1. Sauté the onions, garlic and peppers in a pan with a little oil. 2. Add the cooked beans and season with salt, pepper and cumin. Mash lightly with a fork. 3. Heat the tortillas and fill them with the beans, grated cheese and avocado slices.
